Panela Sugar (Rapadura)

Panela Sugar, also known as Rapadura Sugar, is derived from the raw sugar cane. It's different from regular sugar due to its manufacturing process: no chemicals are used and refining is only the removal of physical impurities. Also, the molasses are not separated. The cane juice is filtered, clarified, and the water is evaporated at low temperatures. In order to obtain the rapadura form the juice is left to dry, and once crystalized it goes through a grinding process.
