One single block of 25kg pure Raw Cacao Butter.

 Cacao Butter is an important component of chocolate. The first stage in processing Cacao is to grind the Cacao Beans to form a uniform paste. This paste has a natural fat content of roughly 50%. This fat is then separated from the Cacao Paste to obtian pure Cacao Butter. The expert chocolatier will mix Cacao Paste and then add pure Cacao Butter to create different textures. The end result is an exquisite molded product that remains firm until dissolved in the mouth.

Cacao butter is one of the most stable fats known, containing natural antioxidants that prevent rancidity and give it a storage life of two to five years.

Pure Cacao Butter also known as Cocoa Butter, is also attributed for helping skin in diminishing burn marks and making scars less visible over a short time.

Maretai Raw Cacao Butter is an important ingredients for those  who love to make raw chocolate. Although the chocolate liquor or cacao paste used in manufacturing chocolate already contains a certain amount of cocoa butter, an additional amount is required to produce a molded product that remains firm until dissolved in the mouth. Why do we source Criollo: 

In Spanish, Criollo means 'of local origin'. This is a very high quality cocoa bean and is very aromatic and lacks bitterness. The Criollo is used in luxury chocolate but rarely alone since it is very scarce and expensive. Becoming less and less available. Found in Venezuela, Peru, Mexico, Nicaragua, Guatemala, Colombia, Samoan Islands, Sri Lanka and Madagascar. Represents less than 3% of the world's cocoa production.
